La grasa culinaria dominante era el aceite de oliva. El pescado se consumia regularmente, y los alimentos de origen animal con moderaci\u00f3n. el vino solia acompa\u00f1ar a las comidas. Los vegetales aportaban el 60% de la energia de la dieta, el aceite de oliva el 15-20% y las prote\u00ednas 12-13%.  los or\u00edgenes del patr\u00f3n alimenticio mediterr\u00e1neo son recmotos y ya se atisban al final del paleolitico superiro. En las culturas minoica y micenica se configura por primera vez el modelo alimenticio con la triada mediterr\u00e1nea trigo, vid y olivo.  en la civilizaci\u00f3n grecoromana se reafirma y caracteriza el modelo con la consolidaci\u00f3n de la triada y toros productos b\u00e1sicos: cebada, legumbres, hortalizas, verduras, etc. Este modelo se mantuvo casi intacto hasta el siglo xx; solo con la cultura arabe y el descubrimiento de am\u00e9rica se enriquecio notablemente. Desde la segunda mital del s.
