{"id":87090,"date":"2018-03-10T00:11:51","date_gmt":"2018-03-10T00:11:51","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/mejora-de-cepas-de-saccharomyces-cerevisiae-utilizables-en-la-elaboracion-de-vinos-de-jerez\/"},"modified":"2018-03-10T00:11:51","modified_gmt":"2018-03-10T00:11:51","slug":"mejora-de-cepas-de-saccharomyces-cerevisiae-utilizables-en-la-elaboracion-de-vinos-de-jerez","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-de-la-vida\/mejora-de-cepas-de-saccharomyces-cerevisiae-utilizables-en-la-elaboracion-de-vinos-de-jerez\/","title":{"rendered":"Mejora de cepas de saccharomyces cerevisiae utilizables en la elaboracion de vinos de jerez"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Francisco Castrejon Marquez <\/strong><\/h2>\n<p>Los estudios encaminados a la mejora de los vinos de jerez se han centrado fundamentalmente en la selecci\u00f3n y mejora de la variedad de uva empleada, as\u00ed como en un control fisico-quimico de la fermentaci\u00f3n, y son pocos los estudios encaminados al conocimiento y mejora de la levadura, que es en definitiva el elemento encargado de la vinificaci\u00f3n, tanto en la fermentaci\u00f3n como en la crianza biol\u00f3gica de estos vinos.  con respecto a la fase fermentativa, se ha obtenido vinos con mayores concentraciones de diversos alcoholes superiores importantes para las caracter\u00edsticas arom\u00e1ticas de los vinos, utilizando una nueva cepa de levadura superproductora de los aminoacids treonina e isoleucina. Por otro lado, se ha analizado la esporulaci\u00f3n apom\u00edctica de la nueva cepa fermentativa.  en relaci\u00f3n a la fase de envejecimiento por crianza biol\u00f3gica, se han obtenido cepas mejoradas en cuanto a la resistencia a altas concentraciones de etanol y a la velocidad en la formaci\u00f3n de velo de flor. Se ha realizado el an\u00e1lisis gen\u00e9tico de una cepa v\u00ednica formadora de velo y se ha purificado una prote\u00edna con localizaci\u00f3n extracelular, a partir de la cual se han secuenciado tres p\u00e9ptidos internos con una similaridad de secuencia del 100% con la super\u00f3xido dismutasa de saccharomyces cerevisiae(ec 1.15.1.1) codificada por el gen sod1. La prote\u00edna purificada presenta a la vez actividad aglutinante sobre la cepa formadora de velo b16, por lo que podr\u00eda estar implicada tanto en la protecci\u00f3n frente a estr\u00e9s
