El estudio del crecimiento celular y la producci\u00f3n de proteasas se llev\u00f3 a cabo en cultivo discontinuo y controlando las variables: concentraci\u00f3n, temperatura y ph. Adem\u00e1s, se evalu\u00f3 el efecto del tipo de esterilizaci\u00f3n: calor y microfiltraci\u00f3n, hidr\u00f3lisis de la lactosa de lactosuero, uso de inhibidores espec\u00edficos, inductores y represores, paso de escala y uso de antiespumante. En cultivo continuo se evalu\u00f3 tanto el crecimiento celular como la producci\u00f3n de proteasas en las condiciones m\u00e1s adecuadas, determinadas previamente en cultivo discontinuo.  el estudio de las diferentes variables indic\u00f3 que la bacteria s. Marcescens en el substrato lactosuero crece y secreta las enzimas normalmente a concentraciones elevadas entre 7 y 12 %(p\/v)y a temperatura \u00f3ptima de, aproximadamente, 28 \u00c2\u00bac y ph natural(6,68). En cultivo continuo se produjo el mismo comportamiento en la secreci\u00f3n de las enzimas.  la cin\u00e9tica de crecimiento celular se evalu\u00f3 a trav\u00e9s de la ecuaci\u00f3n de ricati y la producci\u00f3n de proteasas por la ecuacion de luedeking-piret, indicando en todos los caos que las enzimas se secretan durante la fase de crecimiento celular, principalmente al final de \u00e9sta y al principio de la fase estacionaria. El tipo de esterilizaci\u00f3n m\u00e1s adecuada result\u00f3 ser la microfiltraci\u00f3n y la hidr\u00f3lisis de la lactosa del lactosuero con la enzima   -d-galactosidasa a alta concentraci\u00f3n, 12% (p\/v), condujo a un mayor crecimiento celular y a una baja producci\u00f3n de proteasas, debido a la represi\u00f3n catab\u00f3lica generada por la presencia de glucosa en el medio. el paso de escala condujo a un alto crecimiento celular, pero la producci\u00f3n de proteasas se vi\u00f3 afectada tanto por el antiespumante usado y por el efecto cizalla.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
