Las caracter\u00edsticas de las canales ovinas europeas difieren en funci\u00f3n de la zona donde se producen, as\u00ed, en el norte de europa suelen ser canales pesadas, bien conformadas y de color oscuro, mientras que en el \u00e1rea mediterr\u00e1nea se producen canales ligeras, de pobre conformaci\u00f3n y color m\u00e1s claro. Pero no es la canal sino la carne lo que consume el consumidor, y por ello, se plante\u00f3 esta tesis doctoral.  se analiz\u00f3 la calidad sensorial de la carne de doce tipos ovinos representativos de distintos sistemas de producci\u00f3n europeos y se realiz\u00f3 una prueba con consumidores para determinar su aceptabilidad. Se valor\u00f3 la influencia del sistema de producci\u00f3n sobre la calidad organol\u00e9ptica de la carne de los doce tipos ovinos y sobre las preferencias manifestadas por los consumidores.  la evaluaci\u00f3n sensorial realizada por catadores entrenados revel\u00f3 que exist\u00edan diferencias organol\u00e9pticas en la carne de los diferentes tipos de ovinos y que los corderos procedentes de sistemas de producci\u00f3n parecidos presentaban una carne organol\u00e9pticamente similar y los que proced\u00edan de sistemas de producci\u00f3n diferentes presentaban una carne organol\u00e9pticamente distinta. La terneza y la intensidad de flavor graso de la carne no parec\u00edan estan tan influenciadas por el sistema de producci\u00f3n como otras caracter\u00edsticas sensoriales. La carne de los corderos ligeros (pcf &lt; 15 kg) producidos en sistemas intensivos del \u00e1rea mediterr\u00e1nea a base de leche y concentrado se caracteriz\u00f3 por ser de ternera intermedia, m\u00e1s jugosa, con flavores a cordero, h\u00edgado y rancio menos intensos y flavor l\u00e1cteo m\u00e1s destacable que la carne de los corderos de mayor formato (pcf &lt; 15 kg) producidos en sistemas extensivos del norte de europa a base de pasto.
