Los tratamientos realizados (hasta 500 mpa a 20 \u00f3 45\u00c2\u00bac) fueron comparados con los efectos de los tratamientos t\u00e9rmicos sobre la fracci\u00f3n proteica de la leche.  les conclusiones del trabajo indican que la sensibilidad a la agregaci\u00f3n de las prote\u00ednas s\u00e9ricas caprinas, es diferente seg\u00fan si se trata de procesos t\u00e9rmicos o por alta presi\u00f3n. En el primer caso, el orden de sensibilidad es: immunoglobulinas&gt;seralb\u00famina&gt;b-lactoglobulina&gt;a-lactalb\u00famina.Cuando se presuriza, el orden es :b-lactoglobulina&gt;immunoglobulines&gt;seralb\u00famina&gt;a-lactalb\u00famina.  as\u00ed mismo, se observa que le patr\u00f3n de agregaci\u00f3n de la b-lactoglobulina es diferente cuando se somete la leche a alta presi\u00f3n a calor. En el primer caso, se describen por primera vez la formaci\u00f3n de agregados solubles, formados \u00fanicamente por b-lactoglobulina, si el tratamiento se realiza a 25\u00c2\u00bac, o con mol\u00e9culas de a-lactalb\u00famina si se realiza a 50\u00c2\u00bac. La cantidad y peso molecular de los agregados depende de la presi\u00f3n y temperatura de tratamiento.  la presurizaci\u00f3n de la leche de cabra provoca la modificaci\u00f3n de la estructura de la micela de case\u00edna. Tratando a 20\u00c2\u00bac, se produce una disgregaci\u00f3n con la formaci\u00f3n posterior de cadenas de submicelas. La disminuci\u00f3n del tama\u00f1o micelar depende de la presi\u00f3n de tratamiento a a20\u00c2\u00bac. A 45\u00c2\u00bac y 300-400 mpa, aparecen estructuras cas\u00ednicas de gran di\u00e1metro, con una proporci\u00f3n muy baja de k-case\u00edna y de prote\u00ednas s\u00e9ricas. Si se aumenta la presi\u00f3n de tratamiento, estas estructuras dejan de ser observadas.  el tipo de complejo cas\u00ednico  resultante de la presurizaci\u00f3n de la leche de cabra a 20 \u00f3
