Dentro de los sistemas de calidad  los basados en las normas de la serie iso 9000 son los m\u00e1s populares y los que han experimentado un mayor auge internacional.  el presente trabajo pretende profundizar en la problem\u00e1tica de la implantacion de un sistema de calidad en fabricas pertenecientes al subsector de los alimentos desidratados y liofilizados.  a continuaci\u00f3n se procede a la redacci\u00f3n de un sistema de calidad que satisfaga: las exigencias legislativas alimentarias espa\u00f1olas y de la uni\u00f3n europea. Los requisitos de la norma iso 9002:1994. Las necesidades de una empresa de fabricaci\u00f3n del sector de referencia.
