Este efecto fue debido a las especies moleculares nodisociadas de los acidos, predominantes en el mosto del uva (ph- 3\u00c2\u00bf5).  la presencia de los acidos en el medio provoco el aumento de la actividad de la enzima h+-atpasa de la membrana plasmatica, asi como la inhibicion de la entrada de glucosa y aminoacidos en las celulas. En el caso del acido decanoico los efectos fueron mas pronunciados.  las levaduras liberan los acidos durante los primeros dias de fermentacion, y vuelven a incorporar el acido decanoico al final de la fermentacion. la especie no-disociada se incorporo principalmente en la membrana plasmatica, provocando alteraciones de su organizaci\u00f3n y toxicidad. La especie disociada del acido es incorporada por mecanismos dependientes de la presencia de glucosa, entrado en el citoplasma sin producir toxicidad.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos
