En esta tesis se han caracterizado cuatro proteinas de centeno y una de cebada que inhiben alfa-amilasas (enzimas digestivos) de insectos y\/o mamiferos. Estas proteinas pertenecen a una familia multigenica presente en otros cereales, como trigo, arroz o maiz.  los inhibidores de centeno difieren de otros componentes homologos de trigo y cebada en su grado de agregacion, especificidad inhibitoria y actividad alergenica.  se han obtenido resultados positivos al estudiar la reactividad \u00abin vivo\u00bb e \u00abin vitro\u00bb de estas proteinas
