Caprilico y acidolisis de un aceite concentrada en epa con a. Caprilico. En la hidr\u00f3lisis de trioleina se ha determinado la distribucion de las diferentes especies en el equilibrio en funcion del contenido inicial de agua.  la discusion de los resultados correspondientes a los procesos de acidolisis se ha realizado de acuerdo con un modelo basado en dos etapas de ntercambio corresponientes a las posiciones y 3 de la glicerina. El modelo permitio explicar la influencia del agua, relacion melar, temperatura y algunos aspectos de la naturaleza de los trigliceridos.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
