{"id":89180,"date":"2001-07-03T00:00:00","date_gmt":"2001-07-03T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/influencia-del-consumo-de-carne-de-porcino-frente-a-la-de-vacuno-en-el-perfil-lipidico-de-sujetos-sanos\/"},"modified":"2001-07-03T00:00:00","modified_gmt":"2001-07-03T00:00:00","slug":"influencia-del-consumo-de-carne-de-porcino-frente-a-la-de-vacuno-en-el-perfil-lipidico-de-sujetos-sanos","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-medicas\/influencia-del-consumo-de-carne-de-porcino-frente-a-la-de-vacuno-en-el-perfil-lipidico-de-sujetos-sanos\/","title":{"rendered":"Influencia del consumo de carne de porcino frente a la de vacuno en el perfil lipidico de sujetos sanos"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Jos\u00e9 Antonio Rubio  Garcia <\/strong><\/h2>\n<p>Influencia del consumo de carne de porcino frente a la de vacuno en el perfil lipidico de sujetos sanos   el objetivo de este estudio es analizar la influencia del consumo de dos tipos de carne roja magra (porcino vs vacuno) en el perfil lip\u00eddico de sujetos sanos. 44 sujetos, 22 varones y 22 mujeres, de edad 22,4(1,9) y 23,8(4,6) a\u00f1os y con normopeso, que realizaban una alimentaci\u00f3n con un patr\u00f3n t\u00edpico al de nuestra dieta habitual: 43,2% de grasa total, 13,3% de grasa saturada y 400 mg de colesterol al d\u00eda, participaron en un estudio de intervenci\u00f3n diet\u00e9tica con una alimentaci\u00f3n restringida en grasa saturada (<10%) y colesterol diet\u00e9tico <300 mg\/d\u00eda, siguiendo los criterios de la sociedad espa\u00f1ola de arteriesclerosis (sea). el dise\u00f1o del estudio fue cruzado y aleatorizado, de 6 semanas de duraci\u00f3n por intervenci\u00f3n, con fase de lavado de 5 semanas. En cada periodo de intervenci\u00f3n se consumi\u00f3 diariamente bien carne magra de cerdo o de ternera en la comida principal, realizando la comida principal (almuerzo) en el hospital. Se determin\u00f3 el patr\u00f3n lip\u00eddico: colesterol total, triglic\u00e9ridos, c-ldl, c-hdl y apo a-i y apo b durante cada una de los periodos de intervenci\u00f3n y de lavado. Como variables de control sobre la intervenci\u00f3n se emple\u00f3: an\u00e1lisis bromatol\u00f3gico de la carne y men\u00faes empleados y an\u00e1lisis de los registros alimentarios. Se realiz\u00f3 estudio estad\u00edstico mediante an\u00e1lisis de varianza multivariante y comparaci\u00f3n de medias independientes y para datos apareados (t-student). el principal resultado de nuestro estudio es que ambas intervenciones, consumo de carne magro de vacuno y de porcino no muestra diferencias significativas en el perfil lip\u00eddico, y que el consumo de ambas, dentro de las recomendaciones de la sea fue eficaz en reducir las concentraciones de colesterol total (-4,5%) y de c-ldl (-5,5%). En nuestro estudio concluimos que el consumo de carne de cerdo y de ternera produce efectos similares sobre el perfil lip\u00eddico en sujetos sanos, y que globalmente la administraci\u00f3n de carnes rojas magras, cerdo y ternera, aqu\u00ed evaluadas se pueden incluir libremente en pautas alimentarias que precisen un control de grasa saturada y de colesterol.\n\n\n\n&nbsp;\n\n\n<h3>Datos
