Asi mismo se eval\u00faa el efecto de componente de las fl de soja(prote\u00ednas, \u00e1cidos org\u00e1nicos y fitatos) que pueden influir en la bd y se estudian las interacciones elementales. Se observa una relaci\u00f3n positiva entre el contenido de \u00e1cido c\u00edtrico y las bd de zn y fe, siendo esta \u00faltima la m\u00e1s importante; tambi\u00e9n se ponen de manifiesto interacciones elementales a los contenidos minerales usuales de las fl.  se evalua el papel de la glicoprote\u00edna lactoferrina, como posible componente a adicionar a las fl y su efecto sobre la dializabilidad de fe en diferentes tipos de fl.  por \u00faltimo, se optimiza y valida un sistema in vitro que combina una digesti\u00f3n con un cultivo celular(caco-2) que permita estimar la captaci\u00f3n mineral y se aplica a las fl. Se estudia el efecto del tama\u00f1o de muestra y del tratamiento t\u00e9rmico(inactivaci\u00f3n de los enzimas digestivos) sobre la fracci\u00f3n mineral soluble para evaluar cual es la m\u00e1s adecuada para su adicci\u00f3n a la monocapa celular, se opta por la fracci\u00f3n inactivada(100\u00c2\u00bac\/4min) que se obtiene por centrifugaci\u00f3n tras la digesti\u00f3n de 10 g de f\u00f3rmula. el m\u00e9todo aplicado no permite estimar la captaci\u00f3n a partir de disoluciones patr\u00f3n con contenidos minerales similares a los procedentes de muestras, y si en estas, lo que
