Jes\u00fas <\/strong><\/h2>\n<p>La leche de vaca es un alimento b\u00e1sico de la dieta humana, y como tal, ha sido analizada exhaustivamente durante a\u00f1os. Durante la\u00faltima d\u00e9cada, sin embargo, sin embargo,ha surgido un nuevo tendencia en el estudio de la leche enfocada m\u00e1s a su papel en la defensa del neonato frente a las infecciones. Desde este punto de vista se han iniciado varias lineas de investigacion que se centran en el estudio de los glicoconjugados.  el presente trabajo aborda el tema de los glicoconjugado sialilados de la leche de vaca tanto en su aspecto estructural como en el funcional. se analiza su contenido y composici\u00f3n y como varian a lo largo de la lactaci\u00f3n. se realiza un estudio exhaustivo de los gangliosidos, con especial dedicaci\u00f3n a los cambios en la ceramida. Se compara el contenido de sialiloligosac\u00e1ridos de las diferentes etapas de la lactaci\u00f3n.
