El uso de los antibi\u00f3ticos en estos animales requiere el respeto a los tiempos de espera necesarios para asegurar que en los alimentos procedentes del animal tratado no permanecen residuos peligrosos para el consumidor. Las t\u00e9cnicas microbiol\u00f3gicas juegan un importante papel en el control sanitairo de los residuos de antibi\u00f3ticos en alimentos ya que la \u00fanica caracter\u00edstica com\u00fan a todos los antibi\u00f3ticos es su actividad antibacteriana.  el objetivo principal de este trabajo ha sido el desarrollo y evaluaci\u00f3n de t\u00e9cnicas microbiol\u00f3gicas que se puedan aplicar al control sanitario de residuos de antibi\u00f3ticos en carnes. Se ha realizado una evaluaci\u00f3n de las t\u00e9cnicas micribiol\u00f3gicas de cribado para residuos de antibi\u00f3ticos: determinaci\u00f3n de la sensibilidad y de los perfiles de actividad de la t\u00e9cnica de cribado de las cuatro placas utilizada en europa y comparaci\u00f3n con otras t\u00e9cnicas de cribado: stop utilizada en los estados unidos y star propuesta por el laboratorio comunitario de referencia para residuos de antibi\u00f3ticos. la introducci\u00f3n de una placa con e. Coli aumenta la sensibilidad hacia las quinolonas.  se ha desarrollado un sistema para la eliminaci\u00f3n de los falsos resultados positivos de la t\u00e9cnica de cribado debidos a la presencia de inhibidores naturales en el tejido mediante la utilizaci\u00f3n de una membrana de celulosa.  se ha desarrollado la t\u00e9cnica micribiol\u00f3gica de post-cribado por bioensayo m\u00faltiple: caracterizaci\u00f3n del sistema de identificaci\u00f3n, simplificaci\u00f3n de la t\u00e9cnica y evaluaci\u00f3n mediante patrones de antibi\u00f3ticos. Gracias a la introducci\u00f3n de nuevos microorganismos o de reactivos se ha ampliado el n\u00famero de grupos de antibi\u00f3ticos que se pueden identificar mediante esta t\u00e9cnica:
