Est\u00e1 estructura en tres cap\u00edtulos.  en el primer cap\u00edtulo se ha estudiado la determinacion de la relaci\u00f3n prote\u00edna de suero\/prote\u00edna total de la leche para detectar adiciones de suero. Se ha optimizado un m\u00e9todo de espectroscop\u00eda ultravioleta de la 4\u00aa derivada (uv 4th ds) que ha permitido detectar la adici\u00f3n de suero a la leche uht en una proporci\u00f3n de un 5% en prote\u00edna. Tambi\u00e9n se ha evaluado la determinaci\u00f3n  de la relaci\u00f3n prote\u00edna de suero\/prote\u00edna total mediante un m\u00e9todo de electroforesis capilar en zona libre (ce) y un m\u00e9todo de electroforesis capilar con sds (sds-ce) y se han comparado los resultados obtenidos mediante los m\u00e9todos anteriores  en muestras de leche sometidas a diferentes tratamientos t\u00e9rmicos, obteni\u00e9ndose valores similares.  en el segundo cap\u00edtulo se han evaluado algunas t\u00e9cnicas aplicables a la detecci\u00f3n de la adici\u00f3n de case\u00edna o caseinato a quesos fundidios, quarg y mozzarella: electroforesis capilar, isoelectroenfoque en gradiente de ph inmovilizado (ipg-ief), y cromatograf\u00eda l\u00edquida de alta eficacia (hplc).  por \u00fatlimo, en el tercer cap\u00edtulo, se ha desarrollado un m\u00e9todo de ce mediante el cual pueden cuantificarse simult\u00e1neamente la b-lg y la para k-cn en muestras de leche y queso. La aplicaci\u00f3n del m\u00e9todo ha permitido separar algunos productos de degradaci\u00f3n que aparecen en la leche cruda refigerada, atribuy\u00e9ndose su presencia a la actividad proteol\u00edtica de bacterias psicrotrofas sobre la mol\u00e9cula de k-cn., Adem\u00e1s, el m\u00e9todo de ce desarrollado ha demostrado su utilidad en la caracterizaci\u00f3n de los quesos frescos por su proceso tecnol\u00f3gico de elaboraci\u00f3n y en los quesos mozzarella, adem\u00e1s, por el tipo de leche utilizada en su elaboraci\u00f3n.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de
