<\/strong><\/h2>\n<p>En el presente trabajo, se plantea la obtenci\u00f3n de pectinas a partir de los residuos del prensado de manzanas, empleadas en la elaboraci\u00f3n de sidra.  en una primera etapa del trabajo, se ha optimizado el proceso de extracci\u00f3n de las pectinas empleando \u00e1cido nitrico, y diferentes condiciones de ph, temperatura, tama\u00f1o de particula y tiempo de extraccion.  los extractos obtenidos, se sometieron a una etapa de concentraci\u00f3n empleando membranas de ultrafiltraci\u00f3n, con diferentes umbrales de corte, y se estudi\u00f3 como esta variable, junto con la presion transmembranar, la temperatura, la velocidad, y la concentracion de la disoluci\u00f3n, afectaban a las densidades de flujo de permeado y los rechazos.  previa a la concentracion y la optimizaci\u00f3n de las variables que toman parte en la misma, se realiz\u00f3 una modelizacion del proceso de ultrafiltraci\u00f3n, se empleo un modelo de flujo mixto que proporciono una buena concordancia entre las densidades de flujo de permeado obtenidas experimentalmente, y las obtenidas teoricamente empleando la ecuacion de flujo mixto.  por ultimo, se ha realizado una valoraci\u00f3n economica de la implantacion de esta etapa a nivel industrial, la cual ha revelado que el empleo de una etapa de ultrafiltracion, para concentrar disoluciones procedentes de la etapa de extraccion, es economicamente viable, y podria sustituir parcialmente las etapas de evaporacion que se realizan habitualmente en el proceso de
