La activaci\u00f3n de este sistema permite conservar la leche cruda, y se puede aplicar en los pa\u00edses en desarrollo en los que no hay recursos para los m\u00e9todos de refrigeraci\u00f3n. En este traajo se han estudiado los componentes del sistema lactoperoxidasa, el efecto de diferentes factores y del tratamiento t\u00e9rmico sobre la actividad del enzima y el efecto del sistema sobre la calidad nutritiva de la leche bovina. El efecto conservador del sistema lactoperoxidasa depende de la concentraci\u00f3n en la que se encuentran sus componentes, especialmente el tiocianato y el per\u00f3xido de hidr\u00f3geno, y adem\u00e1s de la temperatura a al que se conserva la leche. Es preferible activar el sistema lactoperoxidasa con concentraciones equimorales de per\u00f3xido de hidr\u00f3geno y tiocianato de 0,25 mm, pudiendo as\u00ed conservar la leche cruda durante 12 horas a 35\u00c2\u00bac y durante 24 horas a 25\u00c2\u00bac. En la leche bovina hay suficiente cantidad de lactoperoxidasa para que el sistema lactoperoxidasa sea eficaz, sin embargo, su actividad enzim\u00e1tica puede ser inhibida hasta en un 65%, cuando la luz, la flora microbiana natural y el per\u00f3xido de hidr\u00f3geno act\u00faan de forma conjunta sobre el enzima. La lactoperoxidasa es un enzima estable a temperaturas de pasterizaci\u00f3n a baja temperatura-largo tiempo (63\u00c2\u00bac\/30 minutos) o pasterizaci\u00f3n a alta temperatura-corto tiempo (72\u00c2\u00bac\/15 segundos) puesto que conserva el 100% de su actividad enzim\u00e1tica. as\u00ed se puede reactivar el sistema lactoperoxidasa despu\u00e9s del tratamiento t\u00e9rmico no muy intensos para extender el tiempo de conservaci\u00f3n de la leche tratada. Las concentraciones de per\u00f3xido de hidr\u00f3geno de 0,25 \u00f3 2,5 mm utilizadas para actiar el sistema lactoperoxidasa, tienen un efecto oxidativo sobre los amino\u00e1cidos azufrados
