En este trabajo se presentan los resultados correspondientes a los par\u00e1metros fisicoqu\u00edmcios utilizados en la caracterizaci\u00f3n y determinaci\u00f3n de la caldiad de las mieles cosechadas en dos departamentos agr\u00edcolas colombianos dentros de zonas geogr\u00e1ficas defindias. Igualmente se ha estudiado el grado de entrecruzamiento y grado de africanizaci\u00f3n de la abeja en el sistema productivo correspondiente a las explotaciones que se realizan en las zonas de vida bosque seco y h\u00famedo tropical (bs-t), (bh-t); bosque h\u00famedo y muy h\u00famedo premontano (bh-pm), (bmh-pm) en el departamento del tolima y las consociaciones de bosque h\u00famedo y seco montano bajo (bh-mb), (bs-mb) en el departamento de boyac\u00e1.  los resultados muestran un alto grado de africanziaci\u00f3n de la abeja en las zonas de vida del tolima, con una mayor presencia de h\u00edbridos europeos en la zona de boyac\u00e1. Las caracter\u00edsticas de las mieles en funci\u00f3n  de su origen bot\u00e1nico corresponden a mieles de mil flores donde se destacan especies de las familias asteraceae. Bignoneaceae, caesalpinaceae, myrtaceae y tuaceae entre otras. Las condiciones de extracci\u00f3n y beneficio corresponden a un sistema artesanal y semiartesanal. La estabilidad microbiol\u00f3gica del producto esta en funci\u00f3n de las condiciones de extracci\u00f3n y beneficio del producto.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
