Teresa <\/strong><\/h2>\n<p>Se ha determinado el contenido de oligoelementos esencial (mn, fe, cu, zn) y toxicos cd y pb) de esparragos enlatados en navarra, el efecto de algunas variables que puedan influir en la concentracion de estos oligoelementos en la conseva, y la relacion entre las concentraciones de estos elementos en los esparragos escurridos y en los liquidos de gobierno. Se han analizado 135 conservas de 45 marcas representativas de las empresas navarras dedicadas a esta actividad. Las muestras han tenido origen comercial. Los oligoelementos esenciales citados se han determinado mediante absorcion atomica y los toxicos mediante voltamperometria de redisolucion anodica. Las concentraciones medias y los intervalos de concentracion encontrados fueron: mn, 0,8 ug\/g (0,4-2, 0); fe, 24,4 ug\/g (1,5-210,0);cu, 0,7 ug\/g (0,2-1,2); zn, 7,4 ug\/g (2,7-13,4); cd, 6 ng\/g (&lt;2-22); pb, 23 ng\/g (&lt;10-237). Se ha visto que existe relacion entre las concentraciones de mn y fe de los esparragos escurridos y de los liquidos de gobierno. Esta relacion permite el control de estos metales en los esparragos a traves del analisis de los liquidos. La mayor fuente de contaminacion del plomo de los esparragos conservados se produce a traves de la costura lateral.
