Por otro lado se optimiza un m\u00e9todo de determinaci\u00f3n de varios pesticidas simult\u00e1nemente para realizar un seguimiento de los mismos desde la uva hasta el final del proceso de elaboraci\u00f3n, a partir de vi\u00f1edos de la zona de ribera baja, mediante hplc-dad, con el fin de poder establecer el si existe riesgo o no de permanencia de residuos de dichos fungicidas. adem\u00e1s se realiza un estudio y caracterizaci\u00f3n de la poblaci\u00f3n levaduriforme aisladas en fermentaciones espont\u00e1neas procedentes de uvas de vi\u00f1edos normales y ecol\u00f3gicos, uno de ellos con cobertura vegetal, con el fin de establecer una relaci\u00f3n entre dichas poblaciones y las pr\u00e1cticas culturales y la aplicaci\u00f3n de
