Los an\u00e1lisis se realizaron en 90 muestras de cebolla pertenecientes a 5 variedades locales (guayonje, san juan de la rambla, masca, carrizal alto y carrizal bajo) y a 1 variedad for\u00e1nea (texas). Tambi\u00e9n se evalu\u00f3 la influencia de la procedencia de la semilla en la composici\u00f3n qu\u00edmica de dichas variedades.    la cebolla es rica en minerales tales como el k, \u00e1cidos org\u00e1nicos como el glut\u00e1mico y c\u00edtrico, fibras especialmente las insolubles, y flavonoides como la quercetina y sus derivados glicosilados.  se encontraron muchas diferencias significativas en la composici\u00f3n qu\u00edmica entre las variedades, por lo que se deduce que las caracter\u00edsticas propias de la variedad determinan la composici\u00f3n qu\u00edmica de la cebolla. En el caso del estudio por procedencia de la semilla, las diferencias no fueron tan acusadas salvo en el caso de la variedad san juan de la rambla que present\u00f3 diferencias muy significativas entre los dos or\u00edgenes de la semilla. Adem\u00e1s la variedad for\u00e1nea texas se diferenci\u00f3 de las variedades locales en muchos de los par\u00e1metros analizados.  el an\u00e1lisis discriminante lineal es una buena herramienta para clasificar las muestras seg\u00fan la procedencia de la semilla y la variedad.   esta tesis se realiz\u00f3 por compendio de publicaciones.
