Todas las muestras fueron adquiridas en establecimientos comerciales. Las concentraciones medias encontradas para pastas de higado en general han sido: mn: 1,1 ug\/g, fe:47,0 ug\/g, cu: 5,3 ug\/g, zn: 20,0 ug\/g cd: 18ug\/g y pb: 475 ug\/g. Se concluye que la fuente oligoelementos mas determinante del nivel de concentracion de oligoelementos en pastas de higado es la materia prima basica (el higado). La concentracion media de oligoelementos en pastas de higado de cerdo es netamente superior a las de pastas de higado de pato. Los productos envasados en hojalata presentan mayores concentraciones de oligoelementos que los envasados en vidrio y aluminio.  la principal fuente de contaminacion de plomo proviene de la costura
