Para ello se analizaron numerosas variables esenciales relacionadas con el microorganismo, con las caracter\u00edsticas del pol\u00edmero y las condiciones de formaci\u00f3n y almacenamiento de sus pel\u00edculas, todas ellas capaces de influir en las propiedades biocidas del compuesto. Adem\u00e1s, se analiz\u00f3 su mecanismo de acci\u00f3n mediante espectroscop\u00eda de infrarrojo, a trav\u00e9s de los cambios en la intensidad de dos bandas principales correspondientes a los grupos activos antimicrobianos. Dado que la elevada sensibilidad al agua de las matrices de quitosano podr\u00eda suponer una restricci\u00f3n fundamental para su aplicaci\u00f3n en el envasado de alimentos, se desarrollaron pel\u00edculas compuestas resistentes al agua incorporando quitosano en otras matrices insolubles. Las mezclas resultantes mantuvieron un efecto antimicrobiano significativo adem\u00e1s de presentar una excelente mejora en sus propiedades barrera al agua. Por \u00faltimo, se confirm\u00f3 la eficacia de las pel\u00edculas obtenidas sobre un alimento real, obteni\u00e9ndose resultados satisfactorios y alcanz\u00e1ndose, por tanto, el objetivo fundamental planteado inicialmente de mantener la seguridad microbiol\u00f3gica del producto envasado y alargar su vida \u00fatil.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
