Como el \u00e1cido s\u00f3rbico y sus sales se utilizan conjuntamente con los nitritos como aditivos alimentarios, es de inter\u00e9s eva\u00c2\u00acluar el potencial alquilante tanto del \u00e1cido s\u00f3rbico como de los productos de la\/s reacci\u00f3n\/es sor\u00c2\u00acbato-nitrito. Para ello se ha manejado como substrato de alquilaci\u00f3n la 4-(p-nitrobencil)piridina (nbp), mol\u00e9cula de nucleofilia semejante a la de las bases del adn.    se ha llegado a las siguientes conclusiones: (i) las mezclas \u00e1cido s\u00f3rbico\/sorbato muestran capacidad alquilante sobre la nbp. La actividad alquilante au\u00c2\u00acmenta al dismi\u00c2\u00acnuir el ph del medio de reacci\u00f3n, siendo m\u00e1xima en el intervalo de ph 5-6; (ii) como resultado de la interacci\u00f3n sorbato-nitrito se forman 1,4-dinitro-2-metilpirrol (nmp) y \u00e1cido etilnitr\u00f3lico (ena); (iii) el ena se descompone para formar \u00f3xido de acetonitrilo (acno),  responsa\u00c2\u00acble de la capacidad alquilante; (iv) el acno forma un aducto (ad) con la nbp de acuerdo con la ecuaci\u00f3n de velocidad  , donde  es la constante de velocidad de alquila\u00c2\u00acci\u00f3n de la nbp por acno y  la constante de hidr\u00f3li\u00c2\u00acsis del aducto formado; (v) la eficien\u00c2\u00accia de la alquilaci\u00f3n de la nbp est\u00e1 determinada por tres reacciones: alquilaci\u00f3n por acno, hidr\u00f3lisis de \u00e9ste e hidr\u00f3lisis del aducto nbp-acno. La peque\u00f1a cantidad de nbp alquilada por acno y su r\u00e1pida hidr\u00f3lisis pare\u00c2\u00accen ser las causas del bajo potencial alquilante del acno, comparado con el de otras especies alqui\u00c2\u00aclantes investigadas previamente en el mismo grupo, como algunas lactonas y las n-alquil-n-nitrosoureas.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
