Teresa <\/strong><\/h2>\n<p>La hipotesis era que el consumo de un aceite procedente de una variedad de girasol con mas del 80% de acido oleico (dieta rica en acido oleico) producia unas lipoproteinas de baja densidad (ldl) y de alta densidad (hdl) mas resistentes a la oxidacion que las obtenidas con un aceite de girasol convencional con un 67% de acido linoleico. Las ldl y hdl3 fueron obtenidas del plasma de 22 monjes sanos de una edad media+-es de 53.7+-3.1 a\u00f1os.  los individuos fueron asignados al azar a dos grupos iguales y consumieron una dieta isocalorica con un 38% de lipidos segun un dise\u00f1o cruzado 2&#215;2 utilizando los dos aceites mencionados. Los fosfolipidos de las hdl3 aisladas despues de la dieta rica en acido oleico estaban enriquecidos en este acido graso. Las ldl y hdl3 obtenidas despues de la dieta rica en acido oleico fueron mas resistentes a la modificacion oxidativa. Los niveles plasmaticos de apolipoproteina (apo) a-i y apo a-ii eran mayores despues de la dieta rica en acido oleico. Los niveles de lipidos, lipoproteinas y apo b del plasma, asi como la composicion, fluidez y contenido en vitaminas a, y e de las ldl y hdl3 fueron similares despues de ambas dietas. El reconocimiento de las ldl por el receptor depurador de los macrofagos y la capacidad de las hdl3 para provocar la salida del (3h)colesterol libre en fibroblastos y en macrofagos eran similares despues de las dos dietas.
