Se caracterizaron los fagos inducidos, mediante estudio de los perfiles de restriccion de sus adn, observandose diferentes fagos en las cepas de l. Oenos.. A partir del adn fagico se construyeron sondas (marcadas con 32-p, y no-isotopicas) que permitieron detectar los fagos y los profagos integrados, mediante hibridacion. Se verifico que todos los fagos de l. Oenos hibridaban entre ellos, y con esta tecnica se encontro un 90% de cepas lisogenicas. Estas sondas permiten diferenciar ademas l. Oenos de otras especies ya que los adn de sus fagos no hibridan con los de otras. Se ha comprobado tambien que la induccion espontanea de los fagos de cepas lisogenicas no representa un peligro para la fermentacion malolactica (fml) debido a las condiciones hostiles del vino para el desarrollo de los fagos. Su presencia esta siempre ligada al desarrollo bacteriano, y no es un indicio de problemas en la realizacion de la fml.
