Por los beneficios que puede aportar el resveratrol a la salud, y las escasas cantidades y fuentes en las que se encuentra, ser\u00eda interesante poder elaborar alimentos funcionales que lo contengan. As\u00ed, para el desarrollo de bebidas enriquecidas con resveratrol, el principal obst\u00e1culo que debemos solventar es su escasa solubilidad den agua, unido a su inestabilidad frente al calor, luz y el ox\u00edgeno; par\u00e1metros importantes para el procesado y conservaci\u00f3n de alimentos. Estos inconvenientes podr\u00edan solventarse mediante la complejaci\u00f3n del resveratol con cds, ya que dicho proceso aumenta su solubilidad acuosa y lo protege de la degradaci\u00f3n por diferentes factores. Adem\u00e1s, tambi\u00e9n es interesante estudiar el efecto de la complejaci\u00f3n en su capacidad antioxidante por diferentes m\u00e9todos. Para ello se plantean los siguientes objetivos: estudio de la complejaci\u00f3n del resveratrol con diferentes tipos de cds. c\u00e1lculo de las constantes de complejaci\u00f3n por diferentes m\u00e9todos. estudio del efecto de la complejaci\u00f3n sobre la actividad antioxidante del resveratrol por diferentes m\u00e9todos.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
