Este modelo de envase es evaluado en ensayos in vitro y caracterizados desde el punto de vista t\u00e9cnico.  posteriormente, el modelo de envase se aplica en dos alimentos diferentes, pan de molde y tomate cherry, que son artificialmente inoculados con sendos mohos. Adem\u00e1s se determina el contenido de distintos compuestos activso y se evaluan par\u00e1metros f\u00edsico-qu\u00edmicos y se realizan ensayos organol\u00e9pticos mediante paneles de cata.  finalmente, se desarrolla y eval\u00faa un m\u00e9todo de microextracci\u00f3n en fase l\u00edquida de tres fases (3p-lpme) que pueda servir en el an\u00e1lisis de fenoles y \u00e1cidos
