Las principales prote\u00ednas de almacenamiento en el endospermo de trigo son las gluteninas de alto peso molecular ya que determinan la funcionalidad de la masa de harina. En este trabajo hemos a\u00f1adido mediante transformaci\u00f3n gen\u00e9tica las gluteninas de alto peso molecular 1ax1, 1dx5 y 1dy10  a una variedad comercial de trigo harinero que no las ten\u00eda en su fondo gen\u00e9tico. Se han obtenido l\u00edneas transg\u00e9nicas individuales y posteriormente se han cruzado entre ellas. En todas las l\u00edneas se ha determinado su comportamiento agron\u00f3mico y las propiedades funcionales de las harinas mediante alve\u00f3grafo, farin\u00f3grafo y mix\u00f3grafo. Tambi\u00e9n se ha determinado la influencia de estas subunidades sobre las propiedades del almid\u00f3n utilizando el rva. Los resultados obtenidos muestran que la adici\u00f3n de las subunidades de glutenina de alto peso molecular a trigo harinero mejora notablemente la calidad panadera. Sin embargo, todas las l\u00edneas tuvieron valores del rva notablemente inferiores a los controles no transformados.  Las l\u00edneas transformadas poseen m\u00e1s copias de genes de gluteninas de alto peso molecular lo que resulta en una red proteica mucho m\u00e1s densa y hay m\u00e1s competencia por el agua con el
