Freeze concentration technology is based on separating soluble solids from their aquose phase by means of ice crystal formation. Two different methods have been proposed to produce these ice crystals, freeze concentration by suspension and by layer crystallization. freeze concentration by suspension is the industrially most applied process. This system uses scraped surface exchangers for the nucleation of ice crystals, crystallizers to increase their growth and to avoid the gibbs-thomson effect (ice crystals melting when do not have an specific radius) and washing columns at high pressure to separate the mix of concentrated fluid and ice crystals. Therefore, freeze concentration by suspension is a high-cost system and to have an acceptable pay-back, it is necessary to process high volumes of high-value food products. freeze concentration by layer crystallization does not have any industrial application to date. Nevertheless the semi-industrial equipment designed at the food processing pilot plant of universitat politécnica de catalunya is based on this process. It is a freezing unit with direct expansion. The coolant liquid circulates inside the stainless steel plates of their evaporator and the fruit juice is impulsed by a hydraulic pump through the orifices of a collector located in the upper side of the evaporator. The collector distributes the juice on the surface of each plate producing a uniform water freezing and a fruit juice concentration that it is proportional to the water transformed into ice crystals and trapped in the evaporator. A remarkable characteristic of this equipment is that allows to obtain fruit juices concentrated up to 30 ºbrix. this equipment has been built with inexpensive standard parts commonly used to make freezing chambers and air conditioning systems. the main objectives of this dissertation are studying, delimiting and parameterizating the variables involved in the freeze concentration process by layer crystallization originat
